2 1/4 C SIFTED ALL-PURPOSE FLOUR
3 TEASPOONS BAKING POWDER
1/2 TEASPOON SALT
1/2 CUP (1 STICK) BUTTER
1 CUP SUGAR
1 EGG
1 TABLESPOON MILK OR CREAM
1 TEASPOON LEMON EXTRACT

MEASURE FLOUR, BAKING POWDER AND SALT INTO SIFTER.
CREAM BUTTER AND SUGAR UNTIL FLUFFY.
BEAT IN EGG, CREAM AND LEMON EXTRACT.
SIFT IN DRY INGREDIENTS,1/3 AT A TIME, BLENDING WELL TO MAKE A SOFT DOUGH.
CHILL FOR AT LEAST 1 HOUR.
WHEN CHILLED, ROLL INTO LOGS ABOUT THE DIAMETER OF A QUARTER AND ROLL IN GRANULATED SUGAR.

YOU MAY FREEZE AT THIS POINT.

WHEN READY TO BAKE, SLICE VERY THIN AND PLACE ON GREASED SHEET BAKE AT 350 FOR 6-7 MINUTES
